Prawn Cocktail with Side Salad

Prawn Cocktail with Side Salad                                               Starter/Side. Serves 10.

This dish is a cheat's delight! Unannounced friends? Quick emergency? This is a starter/side for you. Takes only 5 minutes to prepare fresh, or if like me, you're used to doing things ahead of time, this can be made any time and out in the fridge - it will stay fresh and eatable for up to 2 days. Although for best flavour, eating on the same day is recommended.

Ingredients:
-550g Peeled Prawns
-Pack of fresh ready-to-eat lettuce
-1/2 Cucumber
-Paprika, to garnish

For the Sauce:
-400ml thick Mayonnaise
-2 tbsp. Tomato Ketchup
-4 tsp. Lemon Juice
-Dash Tobasco Sauce
-Seasoning: Salt & Pepper, to taste

1. To make the sauce, mix together the mayonnaise, ketchup, lemon juice, tobasco and seasoning. Mix well until sauce is blush-pink.

2. Add prawns to sauce, stirring gently to coat all prawns with sauce.

3. Arrange lettuce and cucumber on individual plates, topping each with some prawn cocktail. Dust with paprika and serve.

Kitchen Tip:
If you have any leftover prawn cocktail, it's a great sandwich filling for the next day - or even with jacket potatoes!

Creamy Potato & Pasta Salad

Potato and Pasta salad                                                           Accompaniment, Serves 4


This is a hearty accompaniment to any meat, chicken or seafood dish. Instead of the usual rice or green salad, serve this instead. It's nutritious, filling and delicious! Plus it takes only 10 minutes to prepare!


Ingredients:
-5 tbsp. Mayonnaise
-1 tsp. French Mustard
-1 small Onion, finely chopped
-2 medium Potatoes, boiled and chopped
-1 bowlful Pasta
-Seasoning: Salt, pepper, dried parsley 

1. Mix mayonnaise and mustard together in a bowl. Add seasoning to taste.

2. Add in chopped onion and mix thoroughly.

3. Boil and chop potatoes into cubes and add into mixture, mixing thoroughly but ensuring potatoes do not break or get mashed.

4. Add in pasta and mix again thoroughly. Add more mayonnaise if creamier consistency  is desired.

5. Garnish with some more dried parsley on the top.
